Today's my birthday! I'm generally a low-maintenance introvert, but my birthday is the ONE day of the year I feel comfortable demanding the thing I want most: cake. Over the course of my now 38 years, I've requested a handful of birthday cakes: black forest with runny chocolate icing, blueberry cheesecake and my longtime favorite, carrot cake with cream cheese frosting. But this year, I'm requesting German apple cake. I don't have a beautiful photo to share ― it's just a plain-looking sheet cake with cream cheese frosting on top ― but I can tell you that it's filled with juicy apples and warming cinnamon, it's got a little crunch around the edges and you won't be able to eat fewer than three squares. RECIPE: German Apple Cake

Mom my wrote out this recipe a million years ago, so here are a few notes that you may find helpful:

  • "Salad oil" can be vegetable or canola oil
  • I skip the nuts
  • I use about 6 cups of apples, not 4
  • Where the frosting calls for margarine, you can always use butter
