This trick will boost your nutrients AND create the most vibrant, verdant shade of green soup you've ever seen. - Sauté an onion with the chopped stalks of 2 heads of broccoli (not the florets -- reserve those for later!).
- Toss in 2 quarts of vegetable stock and a diced potato (it thickens the soup so you don't have to add cream) and let it simmer away for 30 minutes.
- When the stalks and potatoes are soft, whiz it all in a blender. The result is a dirty shade of white, which is totally unappetizing. Don't panic.
- Here's the trick: At this point, toss a few huge handfuls of fresh baby spinach into the blender. It transforms the soup into a shockingly bright shade of green. But don't return the soup back to the heat, or you'll lose that gorgeous color.
- To finish, steam and finely chop your broccoli florets, and mix them into the soup. Season it to taste, and you're done!
